The pluma is located at the front of the tenderloin. It is a triangular shaped muscle and its particularity is to offer a delicious melting texture and tasty mineral fat that is specific to the Iberico de Bellota pig.

    Integrated production : All our animals are selected to preserve the purity of their genetic heritage, and raised in total freedom in Extremadura's Dehesa (mountain meadow in Spanish) at an altitude between 1000 and 1200 meters above sea level. The animals are processed in slaughterhouses specifically approved for carving the Iberico or Patanegra pig in accordance with the Iberian tradition.

     

    100% original : Our animals' food is 100% natural, made up of herbs (thyme, rosemary, etc.) and 2 seasons of Bellota instead of the usual 1 that is common in the marketplace.
