On the market, canned anchovies often have floury textures with a very salty taste. Maison DEHESA wanted to reinvent anchovies in the Boutargue style to regain their original taste and texture.
Our anchovies, from reasonable fishing, are treated according to a unique process which gives them the lowest salt rate on the market.
In order to restore its natural crunchiness and the flavor of its noble fat, often covered by the oil and salt of the preserves, Maison DEHESA reinvents it in the manner of Sashimi: an original combination of Mediterranean and Japanese canning techniques, to get a semi-cooked semi-raw that explodes in the mouth!
